Not sure what you are eating. It looks like potato skins.
At first I thought you might be eating tripe, but then I remembered that y'all weren't such adventurous eaters, so now I'm guessing you're eating rice noodles? OR perhaps bamboo.
I hope your trip is going well, and you have just a few more hours before you meet your new sister/daughter I'll be thinking of you all day!!

Oh, posted too soon! Congratulations on trying a new food! My eating rules in China are, "Eat whatever is in front of you, don't ask what it is, and if it tastes good...eat more!!". Eat more interesting foods!
